The current domestic and global trends in the development of food technologies, focused on the production of food products for health, preventive, functional and dietary purposes, which significantly expands and enriches the range of dishes with health-improving properties, are considered. The results of research on improving the technology of production of food products due to their addition with non-traditional ingredients of functional direction are given. Proposals regarding the production and improvement of the quality of food products are substantiated, in particular, providing the population of the country with the necessary amount of health food products that meet the basic principles of nutrition of the third millennium, which is a guarantee of the preservation of the nation's gene pool.
