The aim study is to look at the legislative framework of the Medieval food trade, most clearly visible in the city statutes. It is the statutes that delineate the different levels of food trade: they define the types of commodities traded and the rules under which exchange takes place; which foods may be imported and exported; the places and times at which trade is permitted; the measures and weights that certify the quantities sold; the taxes, duties, and fees levied on the commodities; the requirements of sellers; the fixing of a fair price for both sellers and buyers; the packaging and various sanitary requirements of food; the officials who control this segment of the trade, and the penalties that are imposed in the event of non-compliance with city laws. The focus of the study is the statutes of the cities of Istria and Dalmatia, which were adopted between the 13th and 15th centuries.
